15 pound Deer hind courters How to cook outdoors?

I have a 15 pund slab of deer meat and I need a recipes to cook it outdoors on a grill or other methods would be excepted.Im looking for great flavor,tenderness,and unique new experiance. I am a skilled cook but I wanna know what yall think.

Only parts of the venison can be grilled because of the tenderness. As with beef steaks use a good marinade.     I would imagine a rotating spit roast over an open fire. I was at a fair that cooked a whole pig that way very tasty.
